Chocolate Surprise Muffins

  1. Line 6 large muffin cups with paper baking cups or grease bottoms.
  2. Combine dry ingredients; mix well.
  3. Combine milk, oil, egg and almond extract.
  4. Add to dry mixture.
  5. Mix just until moist.
  6. Fill muffin cups 1/2 full with batter.
  7. Spoon 2 tsp preserves into center of each.
  8. Top with remaining batter.
  9. Bake in preheated oven at 400 degrees for
  10. 18-20 minutes or until golden brown.
  11. Let muffins stand 5 minutes and then remove from pan.
  12. Sprinkle cooled muffins with confectioners sugar.
