Peanut Butter Chocolate Chip Muffins

  1. Preheat the oven to 375 degrees.
  2. In a mixer (or with an electric mixer) combine the peanut butter, egg, and both sugars.
  3. Add the soymilk in three parts, beating well after each addition.
  4. Add the flour and baking powder and combine.
  5. Add the chocolate chips and combine well.
  6. Spray 12 muffin cups with nonstick spray.
  7. Add the batter and bake for 12-14 minutes or until a toothpick inserted into the muffin comes out clean.
