Mexican Chicken Cups
- 10 fajitas, softened in the microwave
- 500g chicken strips Whole Foods 1 lb For $3.99 thru 02/09
- 35g salt reduced taco seasoning mix
- 120g baby cos lettuce
- 1 small red and yellow capsicum, roasted and cut into strips
- 1 large avocado, cut into strips Whole Foods 5 ea For $5.00 thru 02/09
- 1/2 cup KRAFT Classic Mayonnaise
- 2 tablespoons sweet chilli sauce
- Press the softened fajitas into 10 x 1 cup muffin pans.
- Bake at 180C for 6-8 minutes until crisp and golden.
- Allow to cool.
- Toss the chicken in the taco mix and chargrill the strips 5-8 minutes or until cooked through.
- Fill fajita cups with lettuce, capsicums, avocado and hot chicken.
- Drizzle each with the combined mayonnaise and sweet chilli sauce and serve immediately.
