Mexican Chicken Cups

  1. Press the softened fajitas into 10 x 1 cup muffin pans.
  2. Bake at 180C for 6-8 minutes until crisp and golden.
  3. Allow to cool.
  4. Toss the chicken in the taco mix and chargrill the strips 5-8 minutes or until cooked through.
  5. Fill fajita cups with lettuce, capsicums, avocado and hot chicken.
  6. Drizzle each with the combined mayonnaise and sweet chilli sauce and serve immediately.
