Tiffany's Bean Pot Soup Recipe
- 2 c. dry pinto beans
- 1 pound ham, cubed (no fat)
- 1 quart. water
- 1 (22 ounce.) can tomato juice
- 2 c. chicken stock
- 3 onions, minced
- 3 cloves garlic, chopped
- 3 tbsp. brown sugar
- 3 tbsp. minced parsley
- 1/4 c. minced green pepper
- 1 tbsp. chili pwdr
- 1 teaspoon salt
- 1 teaspoon crushed bay leaves
- 1 teaspoon oregano
- 1/2 teaspoon cumin seed, grnd
- Soak cleaned beans overnight; drain.
- Add in all of the rest of the ingredients, bring to a boil and cook slowly for 3 hrs or possibly till tender.
- Serve in bowls with tiny minced green onions.
