Bacon Stuffed Cornish Game Hens (Microwave) Recipe
- 5 slc Bacon, diced
- 1/4 c. Minced onion
- 1/4 c. Thinly sliced celery
- 2/3 c. Seasoned stuffing mix
- 1 tsp Parsley flakes
- 1/4 tsp Salt
- 1/8 tsp Pepper
- 2 x Cornish game hens
- 1 Tbsp. Butter
- 2 Tbsp. Bouquet sauce
- In a 1 qt casserole microwave bacon at high for 4 to 5 min or possibly till crisp.
- Remove to paper towels.
- Drain fat, reserving 3 Tbsp.. Add in onion and celery to fat in casserole.
- Microwave at high for 2 to 4 min or possibly till tender.
- Stir in bacon, stuffing mix, parsley flakes, salt and pepper.
- Fill hens with stuffing.
- Place breast side down on roasting rack.
- Set aside.
- In 1 c. measure, heat butter at high for 30 to 60 seconds.
- Blend in bouquet sauce.
- Brush hens with 1/4 of the mix.
- Cover with waxed paper.
- Microwave at high for 8 min.
- Turn over; brush with remaining mix; cover.
- Microwave at high for 7 1/2 to 9 1/2 min, or possibly till legs move freely and juices run clear.
- Let stand tented for 5 min.
- Total microwave time: 22 to 27 1/2 min.
- Standing time: 5 min.
- The stuffing can be prepared on a conventional stove and used with chicken.
