Finnan Haddie

  1. Preheat oven to 400u0b0.
  2. For thin white sauce, melt butter in saucepan, add flour and stir to form paste.
  3. Remove from heat and slowly add 1/2 the milk.
  4. Return to
  5. heat and stir until thickened; beat until smooth.
  6. Gradually stir in remaining milk and heat to simmering.
  7. Place fish in greased casserole dish and pour white sauce over it.
  8. Cover and bake at 400u0b0 for 10 to 20 minutes, until fish flakes easily.
  9. Sprinkle with bread crumbs which have been mixed with melted butter.
  10. Return to oven and bake 5 to 10 minutes, until golden.
  11. Sprinkle with parsley and garnish with lemon wedges.
