To Fry Yellow Split Peas

  1. Cover dried peas with cold water by 1 inch and soak 8 hours.
  2. Drain well in a colander and pat dry.
  3. Heat vegetable oil in a deep 10-inch heavy skillet over moderately high heat until hot but not smoking, then fry peas, stirring occasionally, until golden, 3 to 4 minutes.
  4. Drain peas on paper towels.
