Sweet Potato Gnocchi

  1. Preheat the oven to 400F.
  2. Bake the sweet potatoes for 50min or until soft.
  3. Remove the oven and let cool.
  4. Peel the potatoes and place into a large bowl.
  5. Mash well.
  6. Add the flours, egg, salt, baking soda, and garlic powder.
  7. Stir well to combine.
  8. Refrigerate for 30 minutes.
  9. Dust a work surface with tapioca flour.
  10. Roll out a handful of the chilled dough into a long thin rope.
  11. Cut into 1 inch segments.
  12. Use a fork to slightly flatten each segment
  13. Prepare a large pot of barely boiling water.
  14. Working in small batches drop each piece of gnocchi into the water.
  15. Let cook for about 1 minute.
  16. When they float to the top, remove with a slotted spoon.
  17. Place into a colander drain.
  18. Melted the butter until go light brown and add the sage.
  19. Place the gnocchi and pan-fried them.
