Shrimp Capellini (Authentic Generations Old)
- 1 lb Capellini Noodles
- 1 lb Shrimp (medium) deshelled
- 1 tbsp Extra Virgin Olive Oil
- 5 clove Garlic *fresh & chopped
- 1 cup Portobella Mushrooms, chopped
- 1/4 cup Soy Sauce, (low sodium is best)
- 2 tbsp Sesame Seeds
- 1/4 cup Sesame Oil
- 1 tbsp Brown Sugar
- 3 tbsp Chutney *jar kind is perfect
- 1 cup Green Onion/Scallions *chopped
- 1/2 cup Rice Wine Vinegar
- 1/4 cup Crushed Red Pepper
- 1 pinch Fresh Basil
- Get a large skillet pan or wok and preheat to simmer with olive oil in the pan.
- Start simmering the mushrooms in the oil with the fresh garlic.
- Simmer until mushroom seem carmalized and garlic appears roasted.
- Use medium- low medium heat.
- In a seperate pan start boiling water for the capellini noodles and cook them and drain while finishing steps 3-5.
- Add soy sauce, sesame oil, sesame seeds, brown sugar, Chutney, green onions, and rice vinegar to the pan with the mushrooms and garlic.
- Stir well.
- Simmer all ingredients in pan for 5-7 minitues on low.
- Add your Shrimo to the sauce once it is all simmering and hot, cook 5-8 more minutes on medium to medium low heat.
- You can remove from heat once the shrimp are pink and curled.
- Add the drained Capelleni noodles to the wok/pan making sure to simmer for a moment and stir to infuse all flavors.
- Serve immediately.
- Have crushed red pepper and fresh Basil to garnish for optional heat/spice.
