Shrimp, Herbs And Pasta
- 1 lb. medium-size shrimp, peeled and deveined
- 4 oz. angel hair pasta (uncooked)
- 1/2 c. butter plus 1 Tbsp.
- 2 large cloves garlic, minced
- 1 Tbsp. minced onion
- 1 c. half and half
- 1/4 c. chopped fresh parsley
- 1/2 tsp. dried dill weed
- 1/2 tsp. salt
- 1/8 tsp. pepper
- Cook pasta according to package directions.
- Drain, set aside and keep
- warm.
- In
- a
- large
- cast-iron
- skillet,
- melt butter over medium-high heat and add shrimp, garlic and onion. Cook, stirring constantly, about 4 minutes.
- Remove shrimp and set aside, then add the half and half to the garlic and onions in skillet; bring to a
- boil, reduce heat to low and simmer 15 minutes, continuing to
- stir.
- Return
- shrimp
- and add parsley and seasonings; stir
- until
- blended.
- Serve
- over
- the cooked pasta. Yield: 2 servings.
