Mango Salsa
- 2 tablespoons olive oil
- 1 12 cups yellow onions, diced
- 2 teaspoons ginger, peeled and minced
- 1 12 teaspoons garlic, minced
- 2 mangoes, ripe, peeled, seeded and small-diced
- 13 cup orange juice, freshly squeezed
- 2 teaspoons brown sugar
- 1 teaspoon kosher salt
- 12 teaspoon black pepper, freshly ground
- 1 -2 teaspoon jalapeno pepper, minced
- 2 teaspoons mint leaves, minced
- Saute the olive oil, onions and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent.
- Add the garlic and cook for 1 more minute.
- Add the mangos; reduce the heat to low and cook for 10 more minutes.
- Add orange juice, brown sugar, salt, pepper and jalapenos; cook for 10 more minutes, or until the orange juice is reduced, stirring occasionally.
- Remove from heat and add the mint.
- Serve warm, at room temperature or chilled.
