Berry-Patch Parfait Pie (With Pineapple Variation)

  1. About 1 hr.
  2. before serving or early in day: In 2-qt.
  3. saucepan, dissolve gelatin in hot water.
  4. Add ice cream by spoonfuls, stirring until melted.
  5. Refrigerate right in pan until thickened but not set--about 15 min.
  6. Fold in berries, reserving a few for garnish.
  7. Turn into baked pie shell.
  8. Refrigerate until set--about 25 min.
  9. Garnish with circle of whipped cream.
  10. Tuck in reserved strawberry slices.
  11. PINEAPPLE PARFAIT PIE: Omit water; use pineapple juice drained from 1 No.
  12. 2 can crushed pineapple, plus enough water to make 1 1/4 cups liquid.
  13. Substitute vanilla ice cream for strawberry.
  14. Omit strawberries.
  15. Fold in drained canned crushed pineapple from 1 No.
  16. 2 can.
