Christmas Divinity
- 2 1/2 c. granulated sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 2 egg whites
- 1/2 c. smooth peanut butter
- 1/2 tsp. vanilla
- powdered sugar
- Butter a 2-quart saucepan.
- In the saucepan, combine sugar, syrup and water.
- Bring to a boil.
- Stir only until sugar is dissolved.
- Cook to hard ball stage (260u0b0).
- Beat egg whites until stiff peaks form (tips stand straight).
- Gradually pour hot syrup over egg whites, beating constantly at high speed.
- Add vanilla and beat until candy holds its shape, 4 to 5 minutes.
- On towel dusted with powdered sugar, quickly pat or roll candy into a 16 x 16-inch rectangle and dust with additional powdered sugar.
- Spread with peanut butter and roll up using towel to help roll.
- Wrap in towel. Place on cookie sheet and chill until firm, about 1 hour.
- Makes 1 1/2 pounds.
- Slice to serve.
