Christmas Divinity

  1. Butter a 2-quart saucepan.
  2. In the saucepan, combine sugar, syrup and water.
  3. Bring to a boil.
  4. Stir only until sugar is dissolved.
  5. Cook to hard ball stage (260u0b0).
  6. Beat egg whites until stiff peaks form (tips stand straight).
  7. Gradually pour hot syrup over egg whites, beating constantly at high speed.
  8. Add vanilla and beat until candy holds its shape, 4 to 5 minutes.
  9. On towel dusted with powdered sugar, quickly pat or roll candy into a 16 x 16-inch rectangle and dust with additional powdered sugar.
  10. Spread with peanut butter and roll up using towel to help roll.
  11. Wrap in towel. Place on cookie sheet and chill until firm, about 1 hour.
  12. Makes 1 1/2 pounds.
  13. Slice to serve.
