Whole Chicken Dinner
- 1 whole Chicken (4.5 Pound Size), Cleaned, Giblets Removed
- 2 cups Veggie Or Chicken Stock
- 1/2 cups Apple Cider Vinegar
- 1 cup Water
- 5 whole Carrots
- 3 heads Broccoli
- 8 whole Red Potatoes (optional)
- 1 Tablespoon Fresh Ground Pepper
- 1 whole Sweet Onion
- 5 cloves Garlic
- 1/4 cups Olive Oil
- 2 whole Lemons
- 6 sprigs Thyme
- OK, dont let this long ingredients list intimidate you.
- This is so easy!
- First, preheat your oven to 375 degrees F. Then, place your chicken in a large Dutch oven or roasting pan.
- Be sure to check and remove that little bag of goodies from inside of the chicken.
- We will not be using those in this recipe, that is for certain.
- Pour in your chicken stock, apple cider vinegar, and water.
- Depending on how many vegetables you end up adding, you may add more water.
- Wash your vegetables.
- Peel and chop your carrots, and chop your broccoli.
- Throw your veggies into the pot.
- Cut potatoes in half or quarters if they are big and add potatoes at this time if you are going for the full chicken dinner.
- Also, If you are serving more guests, add more of each vegetable.
- Now, grind a little fresh pepper onto your chicken.
- Set aside.
- Slice your onion and mince your garlic.
- In a saucepan over medium heat, add onion, garlic and olive oil.
- Saute the mixture for several minutes until onions are softened.
- Pour the mixture onto the top of your chicken.
- You should have excess olive oil in your pan that you can pour and rub over your chicken.
- Last steps.
- Slice your lemons.
- Squeeze them over your chicken and all about in your pot.
- I like to lay lemon slices some on my chicken and then just throw the rest in.
- Then add a few sprigs of thyme.
- I throw in several whole springs, as well as sheered and sprinkled some onto the top of the chicken.
- Cover the pot and place your beautiful chicken into the oven on 375 degrees F for 1 hour.
- After an hour, un-cover and cook for at least 30 minutes longer or until done and browned on top.
- Then, remove from the oven, and serve.
- I know my child comes running to the kitchen every time I make this easy meal.
- She loves it so much that she lays by the oven waiting for it to be ready, constantly telling me that a whole chicken dinner is her favorite!
