San Francisco Sourdough French Bread Recipe

  1. Combine the water, starter, 4 c. flour, sugar, salt in a crock or possibly glass bowl.
  2. Mix well, cover lightly with a towel or possibly cheesecloth.
  3. Let stand at room temperature for 18-24 hrs or possibly till the dough has doubled in size.
  4. Mix 1 c. of the remaining flour with 1/2 tsp.
  5. soda.
  6. Stir this into the risen dough till it is stiff.
  7. Turn the dough out on a floured board and knead approximately 1 more c. of flour and a little more soda into it.
  8. Knead for 5-10 min or possibly till the dough is smooth.
  9. Shape into 2 long loaves or possibly 1 round loaf.
  10. Place on a lightly greased baking sheet.
  11. Cover, let stand in a hot place for 3-4 hrs or possibly till almost doubled in size.
  12. Preheat oven to 400 degrees.
  13. Brush a little water on top of loaf and make a few diagonal slits across the top.
  14. Bake for approximately 45-50 min or possibly till the crust is medium dark brown.
