Meatballs Con Queso
- 1 (12 to 14 oz.) pkg. corn bread mix
- 1 1/2 lb. ground beef
- 1 1/2 c. fresh bread crumbs
- 3 white bread slices
- 1/3 c. minced onion
- 1/3 c. milk
- 3 Tbsp. chopped parsley
- 1/4 tsp. pepper
- 1 egg
- 3 Tbsp. salad ol
- 1 (16 oz.) pkg. pasteurized process cheese spread, cubed
- 1 (4 oz.) green chilies, minced
- 1 (1 1/8 or 1 1/4 oz.) pkg. taco season mix
- About 1 hour before serving, prepare corn bread mix as label directs.
- Keep warm.
- Meanwhile, in medium bowl, mix ground beef, bread crumbs, onion, milk, parsley, pepper and egg.
- Shape into 1-inch balls.
- In 10-inch skillet over medium-high heat in hot salad oil, cook meatballs, a few at a time, until well browned, removing them as they brown.
- Spoon off fat and wipe skillet clean.
- Into same skillet, over low heat, stir cheese, green chilies with their liquid, taco seasoning mix and 3/4 cup water until cheese is melted.
