Bubble And Squeak Fritters Recipe

• 1/2 c. SR flour
• 2 x Large eggs, lightly beaten
• 4 Tbsp. Parmesan cheese
• 2 c. cooked vegetables, finely minced
• 2 x spring onions, finely minced black pepper

1. Mix all ingredients in a bowl.
2. Heat a little oil in a non-stick frying pan.
3. Place large tbs of mix into the pan & cook till golden on both sides.
4. Serve warm or possibly cool.
5. Serves 4
