Chicken Cacciatore
- 1 (27 1/2 oz.) jar low-fat pasta sauce
- 1/2 c. Burgundy or other dry red wine
- 1 medium size green pepper, cut into 1-inch pieces
- 1 small onion, cut into 1-inch pieces
- 6 to 8 chicken breasts, cut in bite sized pieces
- 1 tsp. dried Italian seasoning
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 c. cooked fettuccine or egg noodles, cooked without salt or fat
- Combine first 4 ingredients in a large Dutch oven, stirring well.
- Add chicken.
- Bring to a boil.
- Cover, reduce heat and simmer 1 hour or until chicken is tender.
- Add Italian seasoning, salt and pepper to sauce.
- Cook, uncovered, over medium heat 15 minutes, stirring frequently.
- Serve over fettucine or egg noodles.
- Yields 6 servings (397 calories per serving).
