Stompin Good Stew
- 1 lb. lean ground beef or turkey
- 1 large onion, chopped
- 3 garlic cloves, sliced thin
- 2 tsp. chili powder
- 1 tsp. tarragon
- 4 beef or chicken bouillon cubes
- 2 c. sliced celery
- 1 (No. 2 1/2) can crushed tomatoes
- 1/2 c. pearl barley
- 2 Tbsp. lemon juice
- 1 small head cabbage, coarsely chopped
- 16 oz. frozen mixed vegetables
- 1 Tbsp. parsley flakes
- 1 qt. water
- 4 oz. shell macaroni
- 3 Tbsp. cornstarch
- 1/4 c. water
- Brown crumbled meat with onion and garlic.
- Add remaining ingredients except cornstarch and 1/4 cup water.
- Bring to boil, then simmer 20 to 30 minutes until barley is tender.
- Mix cornstarch with 1/4 cup water; stir into hot stew.
- Cook, stirring, until clear and thickened.
- Serves 6.
