Fruited Loaf Cake
- 1 large can (20 oz.) pineapple chunks
- 8 oz. red maraschino cherries
- 8 oz. green maraschino cherries
- 3/4 c. softened margarine
- 2 c. sugar
- 8 eggs
- 1 tsp. vanilla
- 3 3/4 c. all purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 1/2 c. chopped walnuts
- Drain pineapple chunks & cherries over night in colander. Then, before using fruit, set it on and cover it with paper towels to remove excess moisture. Cream butter & sugar well. Add eggs, one at a time, beating well after each addition. Add vanilla. Add dry ingredients to creamed mixture, beating until combined. Fold in drained fruit & walnuts. Turn into 2-3 greased loaf pans & bake in preheated 325u0b0 oven for 1 hour & 15 minutes or until done (do not overbake). Cool in pans. To store in freezer, wrap tightly in foil.
