Chocolate Flax Energy Bar

  1. In a food processor, grind the raw cashews to a powder.
  2. Add the chopped dates, shredded coconut, coconut flour, almond butter, maple syrup, flax seeds, and vanilla.
  3. Pulse until a dough is formed, being careful not to over-mix (the dates should be in small pieces, not ground into a flour).
  4. Line a Pyrex with parchment paper and form the dough into a rectangular bar 1 inch thick.
  5. Refrigerate a minimum of 4 hours or overnight.
  6. To prepare the sauce, combine the chocolate chips with the coconut oil in a glass or stainless steel bowl and set over a pot of simmering water.
  7. Once the chocolate has melted, remove from heat.
  8. The hot chocolate can be poured directly over the cool bars.
  9. Refrigerate for a minimum of 2 hours to set.
