Tabouleh (Tabouli)
- 1 c. uncooked bulgur wheat
- 3 medium tomatoes, chopped
- 2 Tbsp. fresh or 2 tsp. dried mint
- 1/3 c. lemon juice
- 3/4 tsp. salt
- 2 1/4 oz. can sliced black olives (optional)
- 2 c. fresh parsley, chopped
- 5 green onions (with tops), sliced
- 1/4 c. olive oil
- 1 c. boiling water
- 1/4 tsp. pepper
- dash of cayenne pepper (optional)
- In a mixing bowl, pour boiling water over the bulgur wheat. Let sit for 1/2 hour.
- Mix remaining ingredients.
- Pour over wheat and toss.
- Cover and refrigerate at least 1 hour.
- Serve over a bed of lettuce.
- The salad is best if it is refrigerated several hours before serving.
- About 10 servings, 175 calories per serving.
