Mushroom Casserole
- 1 lb. thickly sliced mushrooms
- 6 slices white bread
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1/2 c. mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. pepper
- butter
- 2 eggs
- 1 can condensed mushroom soup
- 1 1/2 c. milk
- cheese (optional)
- Saute mushrooms.
- Butter and cube 3 slices white bread.
- Put bread in bottom of casserole dish.
- Combine sauteed mushrooms with sauteed onion, celery and green pepper.
- Add mayonnaise, salt and pepper.
- Spread this mixture over bread.
- Butter and cube 3 more slices of bread and put over mixture.
- Slightly beat the eggs and milk; pour over casserole.
- Refrigerate overnight.
- Spread soup over top.
- Bake for 1 hour at 300u0b0.
- Sprinkle with grated cheese; bake 10 minutes more.
