Christmas Cake
- 1 c. black walnuts
- 1/2 lb. green candied cherries
- frozen coconut
- 1/2 lb. margarine
- 5 eggs
- 1 c. pecans, broken
- 1/2 lb. red cherries
- 2 c. plain flour
- 1 2/3 c. sugar
- dash of salt
- Combine nuts, cherries and coconut; add flour and mix.
- Cream butter until light and fluffy.
- Add sugar gradually and continue to cream; add eggs one at a time, blending well after each.
- Add salt and flour mixture; blend.
- Pour into a greased and floured tube pan, line bottom with wax paper and cover top with foil. Place a pan of hot water in the bottom of oven.
- Bake in oven at 250u0b0 to 275u0b0 for 2 1/2 hours, removing foil for the last hour of baking.
- Cake is done when top feels slick and sinks slightly from sides of pan.
