Creamy Vegetable Salad Recipe
- 1 bunch fresh broccoli, use tops only
- 1 head fresh cauliflower, cut into flowerets
- 1 med. green pepper, cut up
- 1 lg. onion, minced up (purple)
- Approx. 5 ounce. cheddar cheese, shredded
- 1/2-1 pound bacon, fried crisp, crumble
- 16 ounce. lowfat sour cream
- 1 c. Kraft Miracle Whip
- 1/4 c. sugar + 1 can black pitted olives, sliced
- Place all veggies in a large bowl.
- (Veggies an also be steamed if "raw" veggies do not digest well with some people.
- Cold them through before proceeding with recipe.)
- Combine lowfat sour cream, Miracle Whip, cheddar cheese and bacon in another bowl and thoroughly mix.
- Pour mix onto veggies and mix well.
- (Add in more Miracle Whip if you want more of a creamy texture.)
- Chill.
- Before serving shred a little more cheese on top of salad for color.
- Bacos can be substituted for bacon.
- Approximately 1/2 jar, more if desired.
