3-Cheese Zucchini Parmigiana
- 1 c. dry bread crumbs
- 1 c. grated low-fat Parmesan cheese
- 1 clove garlic
- 1 tsp. basil leaves
- 1/2 tsp. dried oregano leaves
- 3 large zucchini, sliced
- 8 egg whites, beaten slightly
- olive oil cooking spray
- 3 c. low-fat Ricotta cheese
- 1/4 c. minced parsley
- 1/2 tsp. salt
- 2 1/2 c. low-fat spaghetti sauce
- 2 c. shredded low-fat Mozzarella cheese
- Preheat oven to 375u0b0.
- Combine first 5 ingredients in food processor.
- Set aside 2/3 cup of mixture for topping.
- Dip zucchini in two egg whites; coat with mixture and place on baking sheets sprayed with olive oil.
- Bake for 12 to 15 minutes.
