Apple Cranberry Soaked Oatmeal
- 2 cups rolled oats
- 14 cup lemon juice
- 3 cups water
- 2 cups milk
- 1 granny smith apple, peeled and cored
- 12 cup dried sweetened cranberries
- 13 cup brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons ground flax seed meal
- To soak oatmeal, put oats and lemon juice in a 1 quart glass mason jar, fill with water, stir, and soak 12-24 hours.
- Rinse oats, add to 2 quart saucepan.
- Add milk and heat til boiling at medium high heat, stirring occasionally.
- Reduce heat and simmer until oatmeal reaches desired consistency, about 10 minutes.
- Slice and chop the apple.
- Add apple, cranberries, brown sugar, cinnamon, and flax meal to the oatmeal.
- Heat until apples are soft.
- Serve and enjoy!
- Refrigerate leftovers and reheat the next morning for an even easier breakfast!
