Reduced Fat Meat Loaf
- 4 oz. container egg substitute (2 eggs)
- 3/4 c. 1/2% milk
- 1/2 c. oatmeal or bread crumbs
- 1/4 c. finely chopped onion
- 2 Tbsp. snipped parsley
- 1/2 tsp. salt
- 1/2 tsp. ground sage
- 1/8 tsp. pepper
- 1 1/2 lb. extra lean ground beef or ground round
- 1/4 c. catsup
- 2 Tbsp. brown sugar
- 1 tsp. dry mustard
- Combine egg substitute and milk; stir in oatmeal, onion, parsley, salt, sage and pepper.
- Add ground beef.
- Mix well.
- Pat into 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
- Bake at 350u0b0 for 1 1/4 hours.
- Spoon off excess fat.
- Combine catsup, brown sugar and dry mustard.
- Spread over meat loaf.
- Return to oven for 10 minutes. Makes 6 servings.
