Garlic-Cheddar Grits Souffle

  1. Preheat the oven to 350F Lightly grease a 1 1/2 quart souffle dish.
  2. Bring the water to a boil in a medium saucepan, whisk in the grits.
  3. Simmer, covered until liquid is absorbed, about 10 minutes.
  4. Stir in the cheese, salt, pepper, and cayenne.
  5. Set aside to cool slightly.
  6. Meanwhile, saute the onion and garlic in butter for 5-8 minutes until soft.
  7. Stir the onion mixture into the grits.
  8. Beat in the egg yolks.
  9. Whip the egg whites until soft peaks form.
  10. Fold them into the grits.
  11. Gently turn the mixture into the prepared dish.
  12. Bake 45-50 minutes until lightly browned.
  13. Serve hot.
