Sparkling Blueberry Muffins

  1. Heat oven to 375F.
  2. Place paper baking cups into 12 muffin pan cups or grease muffin pan cups; set aside.
  3. Combine milk, 1/2 cup melted butter and egg in bowl.
  4. Add all remaining muffin ingredients except blueberries; stir just until moistened.
  5. Gently stir in blueberries and lemon zest.
  6. Spoon batter evenly into prepared muffin pan cups.
  7. Bake 22-26 minutes or until golden brown.
  8. Cool slightly; remove from pan.
  9. Dip tops of muffins in 1/4 cup melted margarine, then in 1/4 cup sugar.
