Carrot Fritters

  1. In a large bowl, combine the egg substitute and flour.
  2. Stir in the carrots, scallions, parsley and tarragon.
  3. In a separate bowl, whip the egg whites until stiff.
  4. Fold into carrot mixture.
  5. Heat the oil on a nonstick griddle.
  6. Drop 1/4 cup mounds of batter onto the hot griddle.
  7. Flatten a bit with the back of a spatula.
  8. Fry on both sides until golden brown.
