Upside-Down Hershey Peach Cake(This Is Delicious With Fresh Peaches, Pears Or Pineapple.)
- 1 3/4 c. flour
- 1/2 c. cocoa
- 1 tsp. soda
- 1 tsp. salt
- 1/4 c. plus 1 Tbsp. butter
- 1/2 c. packed brown sugar
- 2 Tbsp. light corn syrup
- peach slices
- 1/4 c. maraschino cherries, halved
- 1/4 c. chopped pecans
- 1/2 c. plus 2 Tbsp. butter
- 1 1/2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 3/4 c. buttermilk
- Sift first 4 ingredients together in a bowl.
- In #8 iron skillet, melt next 3 ingredients.
- In skillet, arrange peach slices in sunburst, maraschino cherries and pecans.
- In a bowl, blend the next 2 ingredients.
- Add eggs, one at a time, and then vanilla.
- Beat alternately with sifted flour mixture and the buttermilk.
- Put batter over peach mixture and bake at 350u0b0 for 45 minutes.
