Great Potato Soup Recipe

  1. Place potatoes, celery, onion, water in 2 qt kettle, cover and cook till vegetables are tender.
  2. Heat butter in 1 qt pan.
  3. Stir in flour, salt, mustard, pepper and lowfat milk.
  4. Cook 4 to 5 min or possibly till thickened.
  5. Stir several times to keep from becoming lumpy.
  6. Add in sauce to vegetables.
  7. Cook another 2 min.
  8. For Variation: Add in a small can chopped clams at the last and have a good clam chowder.
