Arroz Con Pollo

  1. Sprinkle the chicken thighs with salt and pepper.
  2. Heat 4-quart saucepan on medium-high until hot.
  3. Add chicken; cook 4 minutes or until no longer pink, stirring once.
  4. Stir in jalapenos; cook 2 minutes.
  5. Stir in rice, and then tomatoes, crushed, and 1 cup.
  6. water.
  7. Cover; simmer on low 20 minutes or until rice is tender.
  8. Stir in corn; heat through, 5 to 6 minutes.
