Arroz Con Pollo
- 1 lb. skinless, boneless chicken thighs
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 2 jalapenos
- 1 1/2 c. short-grain rice
- 1 can stewed tomatoes
- 1 c. water
- 10 oz. frozen corn
- Sprinkle the chicken thighs with salt and pepper.
- Heat 4-quart saucepan on medium-high until hot.
- Add chicken; cook 4 minutes or until no longer pink, stirring once.
- Stir in jalapenos; cook 2 minutes.
- Stir in rice, and then tomatoes, crushed, and 1 cup.
- water.
- Cover; simmer on low 20 minutes or until rice is tender.
- Stir in corn; heat through, 5 to 6 minutes.
