Pork And Mashed Potato Casserole
- 1 Tbsp. oil
- 1 lb. boneless pork, cut into 1/2-inch thick pieces
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 2 1/2 c. sliced mushrooms
- 3/4 c. chicken broth
- 1 tsp. dried thyme
- 1 Tbsp. white vinegar
- 1/4 tsp. pepper
- 1/2 c. apple juice
- 1/4 c. flour
- 2 c. hot mashed potatoes
- Heat oven to 375u0b0.
- Heat oil in 3-quart saucepan over medium heat until hot.
- Cook pork in oil about 6 minutes, until brown. Stir in carrots, celery, onion, mushrooms, broth, thyme, vinegar, salt and pepper.
- Heat to boiling.
- Shake apple juice and flour in tightly covered container.
- Gradually stir into pork mixture. Heat to boiling, stirring constantly.
- Boil and stir one minute. Spoon mixture into 2-quart casserole.
- Cover and bake 45 to 50 minutes.
- Spoon mashed potatoes around edges and bake uncovered 15 to 20 minutes.
- Makes 4 servings.
