Southwestern Skillet Dinner
- 1 lb. 95% lean ground beef
- 2 cups salsa
- 1 medium zucchini, chopped
- 1 tsp. chili powder
- 3 cups cavatappi pasta or any corkscrew noodles, uncooked
- 1 can (11 oz.) no-salt-added whole kernel corn, drained
- 1 cup KRAFT 2% Milk Shredded Cheddar Cheese, divided
- 1 Tbsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- 1/4 cup chopped cilantro or fresh parsley
- Brown meat in large skillet sprayed with cooking spray on medium-high heat, stirring frequently; drain.
- Add salsa, zucchini and chili powder; mix well.
- Reduce heat to low; simmer 10 minutes, stirring occasionally.
- Meanwhile, cook pasta as directed on package.
- Add corn and 1/2 cup of the cheese to the meat mixture; cook 3 minutes or until cheese is melted, stirring frequently.
- Drain pasta; place in large bowl.
- Add meat mixture, lime juice and cilantro; mix lightly.
- Sprinkle with remaining 1/2 cup cheese.
- Serve with lime wedges, if desired.
