Sweet and Sour Chicken

  1. cut the chicken into small chunks and marinate in a dish with the salt, pepper and brandy, for 25/30 minutes.
  2. coat the chicken in the beaten egg, add the flour, turning to coat all sides of chicken.
  3. deep fry for a few minutes.
  4. when cooked set aside.
  5. SAUCE.
  6. heat the oil in a wok, add the veg and stir fry, season, add tomato and stock.
  7. boil and thicken with the cornstarch.
  8. when cooked and thick add the chicken and mix thorouly.
  9. serve with rice.
