Mocha Creme Parfaits!

  1. Place pudding and espresso powder into a mixing bowl.
  2. Combine well using a wire whisk.
  3. Combine the coconut milk, fat-free Half & Half, as well as coconut extract in a separate bowl.
  4. Stir to combine.
  5. Slowly whisk the liquid into the pudding.
  6. Whisk well to combine all.
  7. You could also use a hand mixer for this.
  8. Let sit for 5 minutes.
  9. Now divide among 8 pretty glasses or dessert bowls.
  10. Stir about 1 tsp coconut extract into your thawed "cool-whip-free" and garnish the tops of your desserts.
  11. You may sprinkle with some shaved chocolate or cocoa.
  12. Enjoy, this wonderful dessert.
