Macadamia Pineapple Cake T-R-L

  1. Preheat oven to 350 degrees F.
  2. Grease a 9x5x3-inch loaf pan.
  3. Using a fork mix together nuts, drained pineapple tidbits, baking soda and salt.
  4. Add shortening and heated crushed pineapple.
  5. Mix well.
  6. Beat eggs; beat in sugar and vanilla.
  7. Stir in flour.
  8. Add pineapple mixture and stir just until well blended.
  9. Pour into prepared pan.
  10. Bake 1 hour or until cake tests done.
  11. Cool in pan 10 minutes.
  12. Turn onto rack.
  13. Serve warm or cold.
