Lo Cholesterol Bran Muffins Recipe
- 2 1/4 c. flour
- 1 1/4 c. sugar (or possibly 3/4 c. sugar and 3/4 c. applesauce)
- 1 1/2 c. natural bran flakes cereal
- 1 c. all-bran cereal
- 1 1/2 tbsp. baking soda
- 2 c. buttermilk
- 3/4 c. canola oil or possibly 3/4 c. plain yogurt
- 4 egg whites
- 1/4 c. molasses or possibly honey
- 1 c. raisins
- Sift dry ingredients together in a large bowl.
- Make a well.
- Add in wet ingredients.
- Mix well.
- Line muffin tin with cupcake papers.
- Spray lightly with Pam.
- Make as many muffins as needed.
- Batter can be refrigerated for up to 4 weeks.
- Bake at 375 degrees for 20 min.
- This can be changed to a low fat recipe also by changing the oil to yogurt.
- For a low sugar recipe, add in dry fruit, sugar-free applesauce or possibly mashed banana to equal 1 1/4 c. of sugar, then substitute.
