Penne With Spinach, Pine Nuts, and Raisins
- 1 lb penne
- 13 cup extra virgin olive oil
- 2 garlic cloves, minced
- 1 lb fresh spinach, coarsely chopped
- salt
- 14 teaspoon red pepper flakes (to taste)
- 12 cup raisins
- 14 cup pine nuts
- In a large pot of boiling salted water, cook the penne until al dente, about 8-10 minutes, stir occasionally.
- Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat.
- Add in the garlic, spinach, salt to taste, and red pepper flakes; cook until the spinach is tender, about 2-4 minutes.
- Add in raisins and pine nuts; keep warm over low heat.
- When the pasta is cooked, drain it and transfer to a large serving bowl.
- Add in the spinach mixture and remaining oil; toss; adjust seasoning to taste; serve.
