Mexican Chicken (Version #2) Recipe
- 1 chicken (boiled till tender)
- 1 onion (sauteed in butter)
- 1 can cream of chicken soup
- 1 (10 ounce.) can tomatoes & green chilies (Rotel)
- 1 c. lowfat milk
- 1 can chicken stock (or possibly from boiled chicken)
- 1 (7 ounce.) pkg. Doritos
- Grated cheese to cover
- Pour chicken broth over Doritos in baking dish.
- Add in boned chicken and onion.
- Mix other ingredients and pour over all.
- Note: Better if refrigerated 24 hrs.
- Bake 1 hour at 350 degrees.
- Sprinkle cheese on top and bake till melted.
