Mexican Casserole
- 3 bunches green onions or 1 large onion
- 1 large bell pepper
- 1/2 stick oleo
- salt and pepper (go easy)
- 1 lb. freshly ground beef or ground chuck
- 3 buttons garlic, minced fine
- 1 large can hominy (can use regular size if desired)
- 1 can chili without beans
- 1 can mushroom soup
- 2 c. grated cheese
- 1 small bag corn chips
- Chop onions and pepper.
- Saute in oleo until transparent.
- Add ground beef or chuck; cook, but do not brown.
- Combine with beef and onions all other ingredients, except cheese and corn chips. Mix well.
- Pour into casserole dish at least 2-inches deep.
- Bake at 350u0b0 for 30 minutes (15 to 18 minutes in microwave and covered).
- Add cheese and corn chips.
- Place in oven again until cheese has melted well.
- Can run under broiler to brown.
