Mexican Casserole

  1. Chop onions and pepper.
  2. Saute in oleo until transparent.
  3. Add ground beef or chuck; cook, but do not brown.
  4. Combine with beef and onions all other ingredients, except cheese and corn chips. Mix well.
  5. Pour into casserole dish at least 2-inches deep.
  6. Bake at 350u0b0 for 30 minutes (15 to 18 minutes in microwave and covered).
  7. Add cheese and corn chips.
  8. Place in oven again until cheese has melted well.
  9. Can run under broiler to brown.
