Fish with Fennel and Olives
- 1 large fennel bulb
- 1 tbsp. olive oil
- 1 can stewed tomatoes
- 4 cod fillets
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1/4 c. Kalamata olives
- Preheat oven to 450 degrees F. In 13 inch by 9 inch baking pan, combine fennel bulb and olive oil.
- Roast 15 minutes; stir in tomatoes.
- In same pan, arrange cod fillets in single layer.
- Season with salt and pepper, and top with Kalamata olives.
- Spoon fennel mixture over fish.
- Roast 10 minutes or until fish turns opaque.
