Fish with Fennel and Olives

  1. Preheat oven to 450 degrees F. In 13 inch by 9 inch baking pan, combine fennel bulb and olive oil.
  2. Roast 15 minutes; stir in tomatoes.
  3. In same pan, arrange cod fillets in single layer.
  4. Season with salt and pepper, and top with Kalamata olives.
  5. Spoon fennel mixture over fish.
  6. Roast 10 minutes or until fish turns opaque.
