Breakfast Hash Brown Omelette
- 6 slices bacon
- 3 cups frozen hash brown potatoes or 3 cups shredded cooked potatoes
- 12 cup chopped green pepper
- 13 cup bick's onion relish
- 6 eggs
- 14 cup milk
- salt and pepper
- 1 cup shredded cheddar cheese
- Cook bacon in 10-inch frying pan until crisp.
- Remove from pan.
- Drain and dice.
- Leave 2 tablespoons drippings in pan.
- Add potaotes.
- Cook, stirring occasionally, until heated through.
- Add green peppers and relish.
- Cook 15-20 minutes or until underside is starting to brown.
- Beat eggs, milk, salt and pepper in medium bowl.
- Stir in cheese and bacon.
- Pour evenly over potatoes.
- Mix slightly to let egg mixture seep through potatoes.
- Cover; cook on low for 8-10 minutes, or until eggs are set.
- If desired, broil lightly to brown.
- Loosen edges.
- Serve in wedges.
