Breakfast Hash Brown Omelette

  1. Cook bacon in 10-inch frying pan until crisp.
  2. Remove from pan.
  3. Drain and dice.
  4. Leave 2 tablespoons drippings in pan.
  5. Add potaotes.
  6. Cook, stirring occasionally, until heated through.
  7. Add green peppers and relish.
  8. Cook 15-20 minutes or until underside is starting to brown.
  9. Beat eggs, milk, salt and pepper in medium bowl.
  10. Stir in cheese and bacon.
  11. Pour evenly over potatoes.
  12. Mix slightly to let egg mixture seep through potatoes.
  13. Cover; cook on low for 8-10 minutes, or until eggs are set.
  14. If desired, broil lightly to brown.
  15. Loosen edges.
  16. Serve in wedges.
