Raspberry & Coconut slice

  1. Preheat oven to 180c
  2. In a bowl, add melted butter and caster sugar.
  3. Mix together well with a wire whisk
  4. Add the egg and whisk well
  5. Add flours, stir and combine with a spatula
  6. Add buttermilk and mix well
  7. Line a square cake tin with a baking paper and pour batter in.
  8. Spread it around nicely
  9. Spread over the raspberry jam
  10. For 3rd layer
  11. Into a bowl, add eggs, sugar and coconuts, mix well
  12. Spread it over the raspberry and smooth out
  13. Sprinkle some more coconut on top and bake for 30-35mins
  14. Cool, slice and enjoy.
