Microwave Chocolate Pie

  1. Mix 1 1/2 c. sugar, cocoa, flour and cornstarch in a 2-qt mixing bowl (microwavable) to get out all lumps and set aside. Mix together and set aside:
  2. 1/4 c. milk and 3 egg yolks, slightly beaten.
  3. Put 2 c. milk in microwave and bring to a simmer - about 2-3 minutes.
  4. Blend the sugar/cocoa mixture with the milk/egg yolks and slowly add the 2 c. simmered milk.
  5. Once all of the above is blended, cook on high in microwave in 3-minute increments.
  6. Whisk and put back in microwave.
  7. Cook for about 3 or 4 3-minute increments until mixture is thick enough to "ripple" when dropped from a spoon.
  8. Add 1 stick butter (or margarine) and 1 tsp. of vanilla.
  9. Stir until smooth and pour into a baked 9-inch deep-dish crust.
