Microwave Chocolate Pie
- 1 9-inch deep dish pie crust, baked
- 2 c. sugar
- 2 Tbsp. Hershey's cocoa
- 3 Tbsp. flour
- 2 Tbsp. cornstarch
- Dash of salt
- 2 1/4 c. milk
- 3 eggs, separated
- 1 stick butter
- 1 1/2 tsp. vanilla
- Mix 1 1/2 c. sugar, cocoa, flour and cornstarch in a 2-qt mixing bowl (microwavable) to get out all lumps and set aside. Mix together and set aside:
- 1/4 c. milk and 3 egg yolks, slightly beaten.
- Put 2 c. milk in microwave and bring to a simmer - about 2-3 minutes.
- Blend the sugar/cocoa mixture with the milk/egg yolks and slowly add the 2 c. simmered milk.
- Once all of the above is blended, cook on high in microwave in 3-minute increments.
- Whisk and put back in microwave.
- Cook for about 3 or 4 3-minute increments until mixture is thick enough to "ripple" when dropped from a spoon.
- Add 1 stick butter (or margarine) and 1 tsp. of vanilla.
- Stir until smooth and pour into a baked 9-inch deep-dish crust.
