CopyKat Penrose Sausages
- 1 quart mason jar w/ ring and lid
- 1/2 cup water
- 2 cup white vinegar
- 1/2 tbsp powdered red pepper
- 1 tbsp red pepper flakes
- 1 tsp garlic, minced
- 1 tbsp dried onion
- 1 tsp paprika
- 1/2 tsp white pepper
- 1 tbsp sea salt
- 1 large pinch of allspice
- 28 oz Pkg. of Hillshire Farms lil Smokies
- Add all of the ingredients to a medium size pot; with the exception of the sausages, and bring the mixture to a boil at medium heat for 5 minutes.
- Place the sausages in a clean and sterile 1 quart mason jar and pour the hot brine over the sausage; filling the jar to just cover the sausages.
- Seal the jar with a lid and ring.
- Let cool on the counter and then place in the refrigerator for 7 days.
- On the 7th day, open a cold beer and enjoy!
- I would like to add, please be sure to use a precooked sausage.
- Otherwise, you are just asking for botulism or ptomaine poisoning.
