Garlic Roasted Tenderloin

  1. Preheat oven to 400 degrees F.
  2. In a small food processor, puree the garlic, pepper, salt, horseradish, and thyme until smooth.
  3. Place the tenderloin on a clean work surface and cover evenly with the horseradish paste.
  4. Place the coated tenderloin on a roasting rack.
  5. Roast for 30 minutes or until meat thermometer registers 140 degrees F. Remove from the oven and let rest for 5 minutes.
  6. Slice and serve warm with horseradish cream.
  7. 1/3 cup prepared horseradish
  8. 1/3 cup non-fat yogurt
  9. 1/3 cup buttermilk
  10. In a small bowl, mix the horseradish, yogurt, and buttermilk.
  11. Cover and place in refrigerator for at least 30 minutes.
