His Mother's Dish: Chinese Style Spinach and Egg Stir Fry
- 1 bunch Spinach
- 2 Eggs
- 1 tsp Chicken soup stock granules
- 2/3 to 1 teaspoon Salt
- 1 tsp Water
- 2 tsp Sesame oil
- 1 tbsp Toasted sesame seeds
- Blanch the spinach in plenty of hot water.
- When the spinach is wilted, drain well, squeeze out, and cut into pieces.
- Combine the chicken soup stock, salt, and water.
- Heat the sesame oil in a frying pan, add the spinach and combined mixture from Step 3, and stir fry.
- Push the spinach to one side of the pan, add the beaten eggs to the open side and cook it quickly.
- When the egg is soft set, mix it together with the spinach.
- Add the sesame seeds at the end to finish.
- The egg is fluffy and delicious!
