His Mother's Dish: Chinese Style Spinach and Egg Stir Fry

  1. Blanch the spinach in plenty of hot water.
  2. When the spinach is wilted, drain well, squeeze out, and cut into pieces.
  3. Combine the chicken soup stock, salt, and water.
  4. Heat the sesame oil in a frying pan, add the spinach and combined mixture from Step 3, and stir fry.
  5. Push the spinach to one side of the pan, add the beaten eggs to the open side and cook it quickly.
  6. When the egg is soft set, mix it together with the spinach.
  7. Add the sesame seeds at the end to finish.
  8. The egg is fluffy and delicious!
